Chefs know what is good to eat – even when they are just snacking. This ridiculously delicious “Mexican Poutine” recipe for Beef Barbacoa, Tater Tots and Cheddar Cheese Jalapeño Poppers Recipe was inspired by the favorite lunchtime snack of one of our chefs.
Beef Barbacoa, Tater Tots and Cheddar Cheese Jalapeño Poppers
I got the idea for this combination when I saw one of the cooks at the kitchen where I work snacking on it nearly everyday around lunchtime. Dave fries up about a dozen tater tots, fills a small bowl with shredded cheddar cheese and grabs a spoonful of beef barbacoa meant for the buffet. He takes a tater tot and mashes some cheese and beef around it for a simple snack.
Naturally, I had to try some. The three ingredients are a ridiculously delicious combination. Like a Mexican Poutine.
When I got home that day I immediately set about creating an appetizer bowl out of the three basic ingredients. It was an instant hit and has been a frequent and welcome guest in our house and at parties.

Then, naturally, I thought “Jalapeño Poppers!”
Let me tell you, they are just as good – and just as popular! – as the appetizer bowl. Maybe even better.

About the Recipes
One thing you will notice immediately is that most of our recipes do not have quantities listed for the ingredients. This is by design.
Jalapeños come in many different sizes and shapes (often depending upon the time of year). Their size, the cut you choose (see below) and your own personal tastes will determine how much cream cheese, bacon or other ingredients you put into each pepper. Use your tastes and be sure to experiment a bit.
You will also notice that most directions call for cooking the poppers in an oven. This is because that is the easiest and quickest way for most of us to cook and enjoy jalapeño poppers year round. But if you want to grill, smoke or cook your poppers any other way – Almost every recipe we have will work. We will let you know if it won’t.

Beef Barbacoa, Tater Tots and Cheddar Cheese Jalapeño Poppers Recipe
Ingredients (See Box Above, "IMPORTANT - About Our Recipes" for Information about Quantities)
- Jalapeño Peppers
- Cream Cheese
- Beef Barbacoa fully cooked, store bought or homemade (See below for links to some good recipes to make at home - Coming Soon)
- Cheddar Cheese shredded
- Tater Tots store bought or homemade (See below for links to some good recipes to make at home - Coming Soon)
- Sour Cream to drizzle
- Mexican-Style Hot Sauce of choice, store bought or homemade (See below for links to some good recipes to make at home - Coming Soon), to drizzle
Instructions
- Preheat oven to 350°F.
- Cut the jalapeños into a boat cut. (Click the link above to see how to do a Boat Cut.)
- Place the jalapeños on a cookie sheet. Place sheet in preheated oven. Cook for about 10 minutes. (Skip this step if you prefer your finished jalapeños to be more raw and crunchy.)
- Remove from oven and allow to cool slightly so you can handle them.
- Add cream cheese to each jalapeño to cover the bottom, leaving a concave "well" to place other ingredients. (Click the link below to see pictures of this step, if the instructions are unclear to you.)
- Place a small bit of beef barbacoa into each jalapeño. Drizzle with a small bit of the juice from the barbacoa pan, if desired.
- Sprinkle a small bit of Cheddar cheese over the beef. Just a bit.
- Crush 2 tater tots and place on top of the cheese.
- Mash down very slightly and form to the top of the jalapeño to make sure all the toppings stay put during cooking.
- Place jalapeños back on cookie sheet and place back in oven.
- Cook, watching closely, about 10 - 15 minutes. Check to make sure jalapeños are done to your liking.
- Remove from oven and sprinkle tops with more Cheddar cheese.
- Set oven to broil and allow to heat.
- Place jalapeños back in oven. Cook until cheese on top is melted and bubbly.
- Remove from oven when done.
- Place jalapeños on platter or individual plates.
- Drizzle with a generous amount of sour cream and a little hot sauce.
- Enjoy hot.
