Jalapeño Poppers with Feta Cheese, Walnuts and Fresh Pears
This is an Experimental, Jalapeño Poppers-Lover Recipe. I develop these recipes to have fun, taste new tastes and push the boundaries of what a Jalapeño Popper can be. I welcome comments, innovations and improvements on ALL recipes – but especially these.
Here is what I did —
I tried these first with just feta cheese, but it seemed to disappear in the finished popper (taste wise) and developed a weird texture when cooked. It didn’t melt but just stayed crumbled. This made it hard to eat the poppers in more than one bite as the cheese and other ingredient would fall out of the remaining jalapeno.
So I experimented to find a better solution.
First, I added more feta to try and improve the taste. This didn’t help the texture, of course, and didn’t do a lot for the taste either. It still seemed to not be there at all. I don’t think you can get as much feta into the small area of a jalapeno as you need for the right balance of flavors.
I tried cooking them longer but this didn’t melt the feta. This is a bad idea anyway since this also cooks all the other ingredients too long. You don’t want to burn everything else just to melt the cheese.
So, I went back to that old jalapeno popper stand-by, cream cheese. And this solved both problems. Since the cheeses melted together, the texture was better and the poppers were easier to eat. And the taste balanced out quite nicely. It’s not that perfect feta taste I wanted, but it is quite good.
About the Recipes
One thing you will notice immediately is that most of our recipes do not have quantities listed for the ingredients. This is by design.
Jalapeños come in many different sizes and shapes (often depending upon the time of year). Their size, the cut you choose (see below) and your own personal tastes will determine how much cream cheese, bacon or other ingredients you put into each pepper. Use your tastes and be sure to experiment a bit.
You will also notice that most directions call for cooking the poppers in an oven. This is because that is the easiest and quickest way for most of us to cook and enjoy jalapeño poppers year round. But if you want to grill, smoke or cook your poppers any other way – Almost every recipe we have will work. We will let you know if it won’t.
