BBQ Shrimp Jalapeño Poppers
I was researching Ohio counties for my CountyEats Project, when I came across a picture for a side dish from a BBQ Restaurant that looked good. The description seemed to be the whole recipe, “Baby Potatoes sprinkled with BBQ Rub.”
That sounded good to me, so I made them. I was right – They are amazing. And you can get that very simple recipe on my DishAdventures site by clicking this link – COMING SOON.
That delicious little side dish was still in my mind when I bought a mess of shrimp the other day and I realized that sprinkling some BBQ Rub on boiled shrimp would probably make them about 10 times better, too. I was right. Try it! Just like that. You will freak.
Then, of course, I thought, as I do, “Why not stuff a couple of those BBQ Shrimp into a Jalapeño? Wouldn’t that be even better?”
You just know it is!
Note – It goes without saying – but I’ll say it anyway – These are great for parties. Almost everyone loves shrimp and BBQ. The short ingredient list and short prep time are nice bonuses for you.
About the Recipes
One thing you will notice immediately is that most of our recipes do not have quantities listed for the ingredients. This is by design.
Jalapeños come in many different sizes and shapes (often depending upon the time of year). Their size, the cut you choose (see below) and your own personal tastes will determine how much cream cheese, bacon or other ingredients you put into each pepper. Use your tastes and be sure to experiment a bit.
You will also notice that most directions call for cooking the poppers in an oven. This is because that is the easiest and quickest way for most of us to cook and enjoy jalapeño poppers year round. But if you want to grill, smoke or cook your poppers any other way – Almost every recipe we have will work. We will let you know if it won’t.

BBQ Shrimp Jalapeño Poppers Recipe
Ingredients (See Box Above, "IMPORTANT - About Our Recipes" for Information about Quantities)
- Jalapeño Peppers
- Salt and freshly ground Black Pepper to taste
- Cream Cheese
- Shrimp fully cooked, peeled, deveined and tail removed
- BBQ Rub store bought or homemade (I have a Homemade BBQ Rub recipe below and some links to other good ones)
- Hot Sauce, Hot BBQ Sauce or Cocktail Sauce, store bought or homemade (See below for links to good ones), to dip
- Bacon optional (The bacon is completely unnecessary on these and they look really cool without it. (See the picture above) But add it if you like. You know our motto, "Adding bacon is never bad.")
Instructions
- Preheat oven to 350°F.
- Cut the jalapeños into a boat cut. (Click the link above to see how to do a Boat Cut.)
- Sprinkle insides of cut jalapeños lightly with salt and pepper, to taste.
- Place the jalapeños on a cookie sheet. Place sheet in preheated oven. Cook for about 10 minutes. (Skip this step if you prefer your finished jalapeños to be more raw and crunchy.)
- Remove from oven and allow to cool slightly so you can handle them.
- Add cream cheese to each jalapeño to cover the bottom, leaving a concave "well" to place other ingredients. (Click the link above to see pictures of this step, if the instructions are unclear to you.) Set jalapeños aside.
- Count out 2 shrimp per popper and place in a medium bowl. Throw in 2 or 3 more shrimp so you'll have some to try in a moment. You're gonna want to...
- Sprinkle the BBQ rub over the shrimp. Stir to mix and sprinkle some more. Continue until you have a nice coating. Now, go ahead and sample a shrimp or two. Told ya they were good!
- Take a shrimp and push it, head (large) end down into the cream cheese leaving the tail curing up and out (see photo above.) Place a second shrimp in front of the first. (Yeah, I didn't do so good on that front one. Kinda got both ends out. But that looks pretty good too, don't ya think?)
- If wrapping with bacon, wrap bacon around each jalapeño now. Secure with a toothpick, if you like.
- Place jalapeños back on cookie sheet and place back in oven.
- Cook, watching closely, until cream cheese is hot and bubbling and bacon is done, about 25 - 30 minutes. Check to make sure jalapeños and bacon are done to your liking. If not, place back in oven for more time.
- Remove from oven when done and enjoy hot.
BBQ Rubs
A BBQ Rub is a mixture of salt, spices and herbs that is rubbed on the outside of grilled or smoked meats and seafood (and even vegetables and tofu) to give flavor as it cooks. It creates that delicious crust you get on ribs and brisket at the really good BBQ Joints.
There is an almost unlimited number of ways to make a BBQ rub, from the simple ones with 2 or 3 ingredients to the complex ones with 30 or more. But most have 7 – 10 common ingredients you probably already have at home or can get easily at your supermarket.
Here is an easy and super delicious one that you can use for your BBQ Shrimp Jalapeño Poppers. Or try it on ribs, chicken, fish or anything else that needs a flavor boost.
Normanda's Memphis Dry Rub Recipe
Ingredients (See Box Above, "IMPORTANT - About Our Recipes" for Information about Quantities)
- 1/2 cup Paprika
- 1/4 cup Garlic Powder
- 1/4 cup Chili Powder
- 3 tablespoons Salt
- 3 tablespoons freshly ground Black Pepper
- 2 tablespoons Onion Powder
- 1 tablespoon Celery Seeds
- 4 teaspoons Cumin
- 3 teaspoons Cayenne Pepper
- 2 teaspoons White Pepper
Instructions
- Mix all ingredients together until well-combined.
- Store in an air-tight container up to 6 months.
