Bacon Jam Pimento Cheese Jalapeño Poppers
A few nights ago I was searching around for something new to take to a game night party. I remembered a picture of an appetizer I had seen online a few days early from a bar in Denver that serves Bacon Jam Pimento Cheese in little pots with toast to slather it on. I remember thinking how good that sounded. Being from the South, I practically grew up on pimento cheese and bacon is a food group (along with mayonnaise.)
So I made some. It was very well received – to put it mildly. I won’t name names, but one of the guys licked the bowl when it was done. 😉

I’ll also explain to any of you not from the South exactly what pimento cheese is and why it is soooooooo gooooooood.
As I enjoyed my concoction with my friends, I naturally thought to myself, “this would make a wonderful Jalapeño Popper.” Because, you know, that’s what I do. 😉
I just needed to buy some jalapeños and bacon. I didn’t need to change a thing. Everything was perfect just just the way it was.
About the Recipes
One thing you will notice immediately is that most of our recipes do not have quantities listed for the ingredients. This is by design.
Jalapeños come in many different sizes and shapes (often depending upon the time of year). Their size, the cut you choose (see below) and your own personal tastes will determine how much cream cheese, bacon or other ingredients you put into each pepper. Use your tastes and be sure to experiment a bit.
You will also notice that most directions call for cooking the poppers in an oven. This is because that is the easiest and quickest way for most of us to cook and enjoy jalapeño poppers year round. But if you want to grill, smoke or cook your poppers any other way – Almost every recipe we have will work. We will let you know if it won’t.

Bacon Jam Pimento Cheese Jalapeño Poppers Recipe
This recipe is very simple…ONCE you make the first 2 rather complicated recipes.
I have links to recipes for Pimento Cheese and Bacon Jam. Or, to make it much simpler, you can find pimento cheese, fairly good pimento cheese, in the deli section of most supermarkets (at least you can here in the South) and Kraft makes a jarred version. And recently I have seen jars of bacon jam showing up on the selves of specialty markets, like Whole Foods and Fresh Market. Amazon, of course, carries a large selection of Bacon Jam you can have shipped straight to your door.

- Cut the jalapeños into a boat cut. (Click the link above to see how to do a Boat Cut.)
- Sprinkle insides of cut jalapeños lightly with salt and pepper, to taste.
- Place the jalapeños on a cookie sheet. Place sheet in preheated oven. Cook for about 10 minutes. (Skip this step if you prefer your finished jalapeños to be more raw and crunchy.)
- Remove from oven and allow to cool slightly so you can handle them.
- Slather a nice portion of pimento cheese into each jalapeño.
- Top with a nice but maybe a bit smaller portion of bacon jam.
- Wrap bacon around each jalapeño. Secure with a toothpick, if you like.
- Place jalapeños back on cookie sheet and place back in oven.
- Cook, watching closely, until cream cheese is hot and bubbling and bacon is done, about 25 - 30 minutes. Check to make sure jalapeños and bacon are done to your liking. If not, place back in oven for more time.
