I ain’t gonna lie to you – I developed this recipe and make it most often with the Crab Salad from the Kroger Deli. Part of that is just that seeing the crab salad in the display case makes me think of them. Part of it is that Kroger makes really good crab salad. When you consider that most crab salad recipes only have 5 or 6 ingredients – Crab, Mayo, Celery, Sugar, a couple spices is usually it – it’s no mystery why supermarkets can nail it pretty easily.
The first time I took these to a tailgating, they were made straight up with the Kroger Crab Salad. And, no kidding, my Crab Salad Jalapeño Poppers were the hit of the day. Even my grilling buds who make poppers frequently were impressed. Most of them had never thought of using crab, much less crab salad, in jalapeño poppers .
There is just something almost magical about the way the crab and the cream cheese blend with the roasted jalapeño peppers that you’ll just have to taste for yourself to believe.

Ingredients
The first thing you will notice immediately is that our recipe does not have quantities listed for the ingredients. This is by design.
Jalapeños come in many different sizes and shapes (often depending upon the time of year). Their size, the cut you choose (see below) and your own personal tastes will determine how much cream cheese, bacon or other ingredients you put into each pepper. Use your tastes and be sure to experiment a bit.
Cooking
You will also notice that most directions call for cooking the poppers in an oven. This is because that is the easiest and quickest way for most of us to cook and enjoy jalapeño poppers year round. But if you want to grill, smoke or cook your poppers any other way – Almost every recipe we have will work. We will let you know if it won’t.

- Jalapeño Peppers
- Salt and freshly ground Black Pepper to taste
- Cream Cheese
- Crab Salad store bought or homemade (See below for links to some good recipes to make at home - Coming soon)
- Sharp Cheddar Cheese sliced or shredded
- Bacon
- Brown Sugar
Preheat oven to 350°F.
Cut and seed your jalapeños. All cuts work well with these. I used the classic Boat Cut for the ones in the picture above. But the Cone Cut actually may be better. That is the cut I just for those epic tailgating champions. The crab and mayo cook off a lot of juice and oil and the cones help hold it all in to enjoy. Make them in an upright Jalapeño Cooker to make sure you preserve all the goodness. (Click the links above to see how to do a Boat Cut and a Cone Cut.)
Sprinkle insides of cut jalapeños lightly with salt and pepper, to taste.
If using the Boat Cut, place the jalapeños on a cookie sheet. Place sheet in preheated oven. Cook for about 10 minutes. (Skip this step if you prefer your finished jalapeños to be more raw and crunchy.) If using the Cone Cut, skip this step.
Remove from oven and allow to cool slightly so you can handle them.
Add cream cheese to each jalapeño. Set jalapeños aside.
Place a generous portion of crab salad into each each jalapeño. Press down and fill a bit more.
Top with a slice of Cheddar cheese or spoonful of shredded Cheddar cheese.
Wrap a long strip of bacon tightly around the jalapeño, if using the Boat Cut. Or drape bacon across the top and secure with a toothpick and place in cooker, if using the Cone Cut.
Sprinkle brown sugar on the bacon.
Place jalapeños back on cookie sheet and place back in oven.
Cook, watching closely, until cream cheese is hot and bubbling, or bacon is done, about 25 - 30 minutes. Check to make sure jalapeños and bacon are done to your liking. If not, place back in oven for more time.
Remove from oven when done and enjoy hot.
