Bacon-Wrapped Jalapeño Poppers Recipe
These are the original Jalapeño Poppers – Jalapeño Peppers stuffed with Cream and Cheddar Cheeses and wrapped in Bacon. They were first created by Grill Masters competing on the competitive BBQ Circuit looking for something delicious to snack on while they tended their grills and smokers.
These BBQ-Style Jalapeño Poppers are easy to make and even easier to love.

Bacon-Wrapped Jalapeño Poppers
If you are new to Jalapeño Poppers – In a nutshell, are jalapeño peppers that have been hollowed out and stuffed with a mixture of good stuff to eat, then grilled, baked or deep-fried. Often they are breaded or wrapped with a bacon slice.
The “good stuff to eat” is where the magic happens. It can be almost anything – and I have so many recipes to share – Some crazier than others.
But I thought it best to start at the beginning. This post and the next one include the very basic recipes for the two most common types of Jalapeño Poppers –
- BBQ-Style Jalapeño Poppers – Stuffed and frequently (but not always) wrapped in Bacon, then Grilled or Baked – Most often seen on Patio Grills and Home Ovens and in BBQ Restaurants and Gastro Pubs. Atomic Buffalo Turds and Armadillo Eggs
Those are just two of the original names of the original Jalapeño Poppers.
Before they became a staple at every chain restaurant and even before the bars and gastropubs discovered them, they were a sign of hospitality.
Cooking competition BBQ is a long process with much down-time as the teams wait for the fire to work its magic on the meats. Entire weekends are spent cooking and sitting around waiting. Naturally, along with the beer drinking, much socializing happens between competing teams.
Jalapeño Poppers started out as one of the small snacks thrown on the grill to share with visitors as they came by to talk. The first ones were called Atomic Buffalo Turds (or A.B.T.s) and Armadillo Eggs. The name Jalapeño Poppers came later.

IMPORTANT – About Our Recipes
Ingredients
The first thing you will notice immediately is that most of our recipes do not have quantities listed for the ingredients. This is by design.
Jalapeños come in many different sizes and shapes (often depending upon the time of year). Their size, the cut you choose (see below) and your own personal tastes will determine how much cream cheese, bacon or other ingredients you put into each pepper. Use your tastes and be sure to experiment a bit.
Cooking
You will also notice that most directions call for cooking the poppers in an oven. This is because that is the easiest and quickest way for most of us to cook and enjoy jalapeño poppers year round. But if you want to grill, smoke or cook your poppers any other way – Almost every recipe we have will work. We will let you know if it won’t.

Bacon Wrapped Jalapeño Poppers Recipe
Ingredients (See Box Above, "IMPORTANT - About Our Recipes" for Information about Quantities)
- Jalapeño Peppers
- Salt and freshly ground Black Pepper to taste
- Cream Cheese
- Cheddar Cheese shredded
- Bacon
- Blue Cheese and/or Buttermilk Ranch Dressings, for dipping, store bought or homemade, of choice (See Box Above, "Try these Recipes with Your Bacon-Wrapped Jalapeño Poppers", for links to some Good Recipes to make at Home)
Instructions
- Preheat oven to 350°F.
- Cut the jalapeños into a boat cut. (Click the link above to see how to do a Boat Cut.)
- Sprinkle insides of cut jalapeños lightly with salt and pepper, to taste.
- Place the jalapeños on a cookie sheet. Place sheet in preheated oven. Cook for about 10 minutes. (Skip this step if you prefer your finished jalapeños to be more raw and crunchy.)
- Remove from oven and allow to cool slightly so you can handle them.
- Add cream cheese to each jalapeño to cover the bottom, leaving a concave "well" to place other ingredients. (Click the link above to see pictures of this step, if the instructions are unclear to you.)
- Fill the well in the cream cheese with a generous helping of Cheddar cheese.
- Cut bacon strips in 1/2.
- Wrap bacon around each jalapeño. Secure with a toothpick, if you like.
- Place jalapeños back on cookie sheet and place back in oven.
- Cook, watching closely, until cream cheese is hot and bubbling and bacon is done, about 25 - 30 minutes. Check to make sure jalapeños and bacon are done to your liking. If not, place back in oven for more time.
- Remove from oven when done.
- Serve hot with blue cheese and/or Buttermilk Ranch Dressings, to dip.
